These French-style pineapple fritters (beignets d'ananas in French) are my latest (and greatest!) dessert love.
They have a crispy coconut-based layer outside with a juicy pineapple slice inside.
Once you bite into them, you get that irresistible taste that makes you wanting more.
The recipe calls for sliced canned pineapple rings, but you can also use fresh pineapple to realize this recipe.

What are fritters?
Fritters are food (fruit, vegetables, seafood, etc.) coated in batter and then deep-fried.
Almost every cuisine has its fritters: beignets in France, frittelle in Italy, loukoumades in Greece, tempura in Japan, whitebait fritters in New Zealand.
This list can be continued. In the United States, fritters are doughnuts made with batter, which is pan-fried or deep-fried.
If the batter is made with cornmeal instead of wheat flour, doughnuts are called "corn fritters."
Are fritters healthy for you?
Since pineapple fritters are a deep-fried treat, you might think that they are not good for your health.
However, let us look at this dessert from the view of the nutritional content.
One serving is one pineapple fritter that contains only 77 calories. Considering a 2,000-calorie daily value, you eat only 3.85 percent of your day’s calories with each fritter.
Each pineapple fritter contains about 3.3 grams of fat, 5.5 percent of a 60-gram fat daily value.
What is about cholesterol? Each pineapple deep-fried ring is about 15 milligrams of cholesterol, 5 percent of a 300-milligram daily limit.
Do you worry about carbohydrates? A pineapple fritter is about 9.9 grams of carbohydrates, only 3.3 percent of a 300-gram daily value.
Plus, do not forget about the benefits of the pineapple itself. It looks that pineapple fritters represent one of the healthy desserts and are safe to pamper yourself!

Ingredients
Here is a quick overview of what ingredients you will need. Follow the full recipe below for exact amounts and instructions. I recommend making the recipe as written for the best results.
Canned pineapple: use canned pineapple slices (you will need 1 can) or replace them with the pineapple cored and cut into rings.
Milk: use whole milk for the recipe. You can replace milk with the same amount of coconut milk if desired.
Egg: you will need one large egg.
Flour: the recipe calls for all-purpose flour.
Shredded coconut: use organic unsweetened shredded coconut.
Icing sugar: make it yourself with a coffee grinder or use powdered sugar.
Salt: a pinch of salt is what you need here.
Oil: to make the pineapple fitter butter, use olive oil or any other kind of oil.
Frying oil: the best oil for frying is vegetable oil, a blend of different plant-derived oils.
Its smoke point (the temperature when the oil starts to burn and create smoke) is between 440 degrees F/226 degrees C and 450 degrees F/232 degrees C.
So it means that this kind of oil has a very high smoke point. Moreover, vegetable oil is neutral (or flavorless) and cheap enough.
You can also use other neutral, high-heat oils such as canola oil, sunflower oil, or peanut oil, but they are more expensive.
How to make pineapple fritters
To make the pineapple fritter batter, sift plain flour with a flour sifter and combine flour with icing sugar in a large bowl.
Make a fountain in the center of the flour mixture, pour in the egg and olive oil (photo 1), and mix with a rubber spatula or a wire whisk.
Then pour cold milk little by little and mix: the dough will be smooth and thick enough and resemble pancake batter (photo 2).
Cover the bowl with plastic film and refrigerate for 2 hours.
Meanwhile, drain pineapple pieces using a kitchen paper towel. Heat frying oil in a large saucepan over medium heat to 350 degrees F/175 degrees C (use a cooking thermometer).
Pour shredded coconut on a shallow plate. Dip pineapple slices in the batter to coat them thoroughly, shake off the excess batter.
Then put them in shredded coconut (photo 3). Finally, dip two pineapple slices coated in the batter and coconut in hot oil.
Cook them for about 1 to 3 minutes per side, turning over with two forks or tongs until the fritters become golden brown.
Continue with the rest of the pineapple slices, cooking them two by two (photo 4).
Remove fritters with a slotted spoon, drain on paper towels and serve immediately.
How to serve
Pineapple fritters are best served warm. Serve them on their own or with chocolate sauce.
Or add a drizzle of warm caramel sauce or your favorite syrup. You can also sprinkle fritters with icing (powdered) or cinnamon sugar (mix of 1 cup (225 g) granulated sugar and one teaspoon ground cinnamon).
Finally, accompany pineapple fritters with your favorite ice cream.
Storage
These fritters are best eaten on the same day. You cannot store them in the fridge. Pineapple fritters cannot be frozen either.
Expert tips
- Be sure the pineapple slices are well-drained and patted dry; otherwise, the fritter batter will not stick.
- If you do not have a cooking thermometer, put 3 to 4 raw, dry corn kernels in the oil. Once they burst, the oil is at the right temperature.
- Do not overcrowd the saucepan while frying: fry two pineapple rings at once. Cooking more than two rings at once can drop frying oil temperature and greasy fritters instead of the crispy ones.
- Set the oven on low heat to keep the finished fritters warm, and place rings on a baking sheet lined with a paper towel. Keep fritters in the oven until ready to serve.
Frequently asked questions
Pineapple contains high amounts of fiber, the enzyme bromelain. It provides immune system support due to vitamin C and prevents osteoporosis in postmenopausal women due to manganese. Pineapple helps digestion due to fiber and reduces inflammation due to bromelain.
Once you make the pineapple fritter batter, cover it with plastic film and refrigerate for 2 hours. You can store it overnight.
You do not need a deep fat fryer to make pineapple fritters; you can use a saucepan with frying oil and forks or tongs.
I have never tried making these fritters in an air fryer, so I cannot predict the result.
