No-Bake Banoffee Pie Cups

These easy, no-bake Banoffee pie cups can be made in just 15 minutes. Served individually, this dessert is perfect for an entertaining party or your cozy dinner. 

Ingredients

  • 3.5 oz (100 g) shortbread cookies
  • 0.8 oz (25 g) unsalted butter, softened
  • 1 1/2 yellow bananas 
  • 3 tablespoons dulce de leche
  • 1 1/2 cups (300 ml) whipping cream
  • 1 1/2 tablespoons (20 g) brown sugar
  • 1 tablespoon orange flower water (optional)

Instructions

  1. Place shortbread cookies in a food processor and crush them to get cookie crumbs. Use your hands to mix crumbs with softened butter.
  2. Divide three-quarters of the mixture between three cups, placing cookie crumbs at the bottom. Add slices from half a banana to each cup and a generous spoonful of dulce de leche.
  3. Whisk together whipping cream, brown sugar, and orange flower water. Using a pastry bag with your favorite tip, pipe the cream onto the sliced banana, or spoon it on top. Sprinkle with the remaining crumbled shortbread cookies. Refrigerate 1 hour before serving.

Notes

  1. Use store-bought shortbread fingers or swap with tea biscuits like digestive.
  2. Create one to two layers of banana slices, dulce de leche, and whipped cream if desired.
  3. Crush the cookies with your fingers if you don't have a food processor.
  4. Replace orange blossom water with vanilla extract if desired.
