Those speckled, soft bananas sitting on your counter? Don't toss them. They are at their sweetest, most flavorful stage. Overripe bananas are perfect for baking and blending, bringing natural sweetness and moisture to all kinds of comforting (and easy!) treats.

Overripe banana recipes

Here are 11 of my favorite overripe banana recipes to turn those brown bananas into something tasty.

1. Banana bread (the ultimate classic)

This American favorite has become a star in European cafés and Sunday brunches for a reason. It first became popular in the 1930s during the Great Depression as a way to avoid wasting overripe bananas.

Today, banana bread is endlessly customizable: add pineapple (try my pineapple banana bread), chocolate chips, macadamia nuts, cinnamon, or a swirl of Nutella.

Pro tip: The riper the banana, the sweeter the bread will be.

And yes, you can keep it simple with this sugar-free banana bread version-just as moist and flavorful, without the extra sugar.

2. Banana muffins

These banana bread mini muffins are quick, freezer-friendly, and perfect for using up 2-3 bananas. Top with chopped nuts or a sprinkle of brown sugar before baking for a bakery-style touch.

3. Flambéed bananas

This one brings the Caribbean to your table. Slice bananas thick or lengthwise, sauté with a little sugar and butter, then flambé with rum for a show-stopping dessert that comes together in minutes.

Bonus tip: Serve over vanilla ice cream.

4. Banana pancakes

They are soft, naturally sweet, and lighter than traditional pancakes. Even better? They are gluten-free and can be made without dairy.

Try this simple version:
- 2 ripe bananas
- 2 eggs
- 50g cornstarch
Whisk, cook, and serve with fresh fruit or drizzle with maple syrup.

5. Banana oat cookies

Mix mashed bananas with oats, nut butter, and a few extras like raisins or dark chocolate chips for a soft, chewy cookie you can feel good about.

8. Banana chocolate chip cake

Moist, soft, and full of flavor, banana cake is perfect when you want something slightly more elegant than banana bread. Top it with chocolate glaze or just dust with powdered sugar.

9. The yum-ô-fruits (Banana power bowl)

This quick banana-based bowl is packed with nutrients. Here is how to make it:

  • Mash ½ ripe banana with a little rapeseed oil.
  • Add crushed hazelnuts, almonds, and cashews.
  • Mix in lemon juice and top with seasonal fruits.

Great for breakfast or an afternoon pick-me-up.

10. Banana waffles

Use mashed banana to replace some of the sugar or fat in waffle batter. The result? Soft on the inside, crisp on the outside, these waffles are subtly sweet.

11. Banana energy bites
